I bought a few years ago your book called The Ultimate PH Solution. Recently, I came to realize that I was hypersensitive to wheat and gluten.
I like to make your recipe on page 149 of the above-mentioned book Herb Spelt Bread and tried to substitute the spelt flour with gluten free flour (made of brown rice, quinoa buckwheat, amaranth, tapioca starch ground flax seeds from the brand company Cuisine L'Angélique) and made muffins instead of a bread.
The result was catastrophic. The outside of the muffins after baking nearly 1 hour 15 minutes were hard as rock and the apparel inside was not cooked.
Would you have any advice to give me. My husband and love this recipe and would appreciate any suggestions to replace the spelt flour.

Sadly, most recipes don't translate well to gluten-free ones. I'm not familiar with the gluten-free flour brand you mentioned so it is hard for me to comment on what you might need to do. Stay posted to my blog on a regular basis as I plan to include some gluten-free recipes that I have developed and tested to ensure their effectiveness.
